There are two main vitamins found in sweet potatoes. Although these
delicious vegetables share the name potato with the more traditional
varieties, they are much more nutritious. In fact, soldiers during the
revolutionary war used these as a staple because they were cheap and
extremely healthy.

Difficulty: ModerateInstructions
1. Step 1

.
Look at the size of the vegetable. The two main vitamins found in
sweet potatoes are based on an average sized sweet potato. If
yours is smaller or larger, adjust accordingly.

2. Step 2
Consider how much vitamin A your body needs. Sweet potatoes
contain 2 times the recommended daily allowance. That is amazing
when you're only talking about half a cup, and counts as one of
the two main vitamins found in sweet potatoes.

3. Step 3
Think about another essential nutrient that helps fight off
illnesses. The second of the two main vitamins found in sweet
potatoes is vitamin C. 1 medium serving has about 45 percent of
the recommended daily allowance.

4. Step 4
Eat your vegetables with the skins. Although you still get the two
main vitamins found in sweet potatoes without the skins, you
greatly increase fiber intake if you leave the skins on the flesh.

Tips & Warnings
The natural sugars found in sweet potatoes slowly digest to keep
you full for a longer amount of time.
